ROASTED MELONGENE w/ ROLLS

Roasted Melongene (Eggplant)

Wash the melongenes











Score with a knife














Peel & Slice Garlic cloves













Add the sliced garlic in to the pockets made in the melongene

Place the melons on the stove top w/ burner on high or med

Note: the melons, drip a liquid that can be hard to remove after it dries so you may want to add a layer of foil to the stove top & burner b4 starting.












Let roast for 5 minutes or until chard then turn
The side is chard, the smokey scent is in the air

When all the sides have been well roasted remove





Place in bowl & cover. Leave for about 10 mins or less ( this makes the peeling easier)


Get ingredients together: Salt, black pepper, chives, shadon beni, onion powder, & Pepper sauce


Peel the melongene



The garlic that was inserted becomes roasted also

I used 2 instead of 3 melongenes, this is how it looks after the chard skin has been removed


Diced Seasonings, salt, pepper, pepper sauce, onion powder. Oil can be added but I wanted a low fat version


It would have been totally fat free if i had made my version of tortilla wraps (which is jus flour + water + salt )
